Located in Camisão, the winery has a varied menu made from local products, such as jams and cheeses.
Immersion in the world of wines and harmonization of drinks with a special menu made with local products is what Terroir Pantanal Wine and Beer promises. The winery, which is the first in Mato Grosso do Sul, is located in Camisão, district of Aquidauana, 132 kilometers from the capital.
Last year, Side B did an article to talk about the project that was in the implementation phase. In February of this year, the winery officially opened its doors. On site, the public can enjoy a brunch, family picnic, guided trail and other services that promise to provide an enriching experience.
According to owner Gilmar França, 50, the tours are intended to show and teach visitors all about the drink. He explains that the experience is as valid for those who understand wine as for those who know nothing.

“Most of the people who visit us today haven’t had the opportunity to go to a winery. We make an identification of the knowledge she has and what she wants to learn. This is for her to have the opportunity to get to know and understand the wine universe”, she clarifies.
The program is based on four different experiences, which are only offered on weekends and by appointment. In three of the activities offered, the public has the opportunity to taste the menu made from products sold by local entrepreneurs. The only one that does not include food is the guided trail at Mirantes. The trail lasts 1h50, starting in the southwest area of Morro do Paxixi.
In addition to enjoying the dishes, visitors also have the option to buy the products. Gilmar tells us about some of the handicraft works that you can try at the winery. “We have a cheese produced in the region by Charcutaria Pantanal, honey from Fazenda Toca da Onça, jams and yogurts. Along with the wines we serve local products for pairing. The sommelier presents the characteristics and differences of the wines,” he says.
Discover the tours – Tours range from R$ 65 to R$ 170. The first one is the Terroir Pantanal Wine Experience, where visitors get to know the entire process of implementing the vineyard; soil characteristic; climate; management and cultivated varieties. Then there is a tasting paired with winter wines, cheeses and cold cuts. Finally, visitors can freely stroll through the gardens and woods.
The Brunch Terroir Pantanal offers the most complete gastronomic experience. The menu, which mixes breakfast and lunch items, consists of seasonal fruit juices, coffee, tea, milk, yogurt, cappuccino, granola, chia, oatmeal, assorted breads, cakes, cheeses, sandwiches, broths, sausages. , pancakes, couscous, escondidinho, chicken pie and other delights.
The Picnic Wine Experience takes place in the woods and vineyards. The visitor receives a basket filled with food to be paired with wine. Fresh fruit; dried, mixed nuts; grazing cone; sausages; antipasto; jam; assorted cheeses and artisan breads are the products that accompany the basket. The Picnic Família Terroir Pantanal has similar products to the other tour, but the menu is balanced for parents and children.
Sold separately, the establishment prepares bruschettas with artisanal bread toasted in olive oil, gorgonzola cream, caramelized pear in pantanal honey, arugula, farofa baru and pout pepper. The house also serves bresaola accompanied by Sicilian lemon sauce with baru, arugula, parmesan shavings and toast; buffalo burrata with tomato, pickles, pepper jelly, honey, basil pesto and bread. Finally, there’s the pastrami sandwich with black olives, honey, mustard, olive oil and pickle carpaccio wrapped in sheet bread.
With a free schedule only for the end of July and beginning of August, the winery by the hour has a waiting schedule. Gilmar justifies that the reason is the limited number of visitors. “We have a waiting list, because the proposal is an exclusive experience. We have a limit number that we receive per period which is 50 people and with reservations”, he says.
